Bacon wrapped asparagus with pickled plum sauce

Quick to prepare and a delight for guests, this dish combines juicy, sweet, and slightly acidic flavours. Enhanced with the fullness of smoked bacon, it's the perfect way to enjoy seasonal asparagus!
Ingredients
Serves 2
6 | Asparagus spears |
6 | lashes of smoked streaky bacon |
2tsp | Sunflower oil |
Pickled plum sauce | |
2 | Pickled plums |
1tbsp | Soy sauce |
1tbsp | Mirin |
Make the Pickled Plum Sauce:
Remove seed from the pickled plum by hand.
Combine all the ingredients in a food processor and blend until smooth. Alternatively, you can use a pestle and mortar to achieve a similar consistency.
Prepare the Asparagus:
Lay a strip of bacon diagonally on a flat surface, such as a chopping board or plate.
Place an asparagus spear on top of the bacon. Wrap the bacon around the asparagus in a spiral, starting from the bottom and working your way to near the top. Repeat this process for the remaining asparagus spears
Cook the Bacon-Wrapped Asparagus:
Pour oil into a frying pan and heat it over medium heat.
Once the oil is warm, place the bacon-wrapped asparagus in the pan with the seam side down to ensure it stays wrapped.
Cover the pan with a lid and cook for 4 minutes.
Turn the asparagus to cook the other side. Continue cooking for another 3-4 minutes with the lid on, or until the asparagus is tender and the bacon is slightly browned.
Pour the pickled plum sauce over the cooked asparagus.
