While often called "unfiltered sake", nigorizake is actually sake that is passed through a mesh filter after pressing, removing most but not all of the undissolved rice in the moromi, or sake mash. These fine particles of rice in solution give nigorizake additional body as well as its characteristic pearly white colour.
