Salmon Yuan Yaki
鮭の幽庵焼き
Yuan yaki is similar to teriyaki, it is less sweet with lovely citric freshness from yuzu juice. Very easy to make and utterly delicious.
Ingredients
Serves 2
2 | Salmon fillets |
2 tbsp | Soy sauce |
1 tbsp | Mirin |
1 tbsp | Sake |
2 tbsp | Yuzu juice |
1 tsp | Sunflower oil |
½ tsp | Salt |
Preparations
Season salmon with salt first. Easier to sprinkle half of the salt on a tray then place salmon skin side up on top, sprinkle the rest of the salt on top of the skin. Leave for 15 minutes in the fridge.
In the meantime, make marinade by mixing soy sauce, mirin, sake and yuzu juice in a bowl.
Marinate the salmon overnight in the fridge. You may find it easier to use Ziploc or freezer bag to store.
Cooking
Take out the salmon from the sauce, place the salmon on a piece of kitchen towel to absorb the excess sauce. It will prevent the salmon from burning before it is cooked.
Preheat the frying pan over medium heat, pour oil.
Place the salmon fillets skin side down, cook for 5-6 minutes. Turn over the salmon and cook the other side for a couple of minutes.
Pour 2 tablespoons of the sauce over the salmon, tilt the frying pan to scoop up the sauce, spoon over the salmon to caramelize the surface several times.
Turn off the heat to serve immediately.
