Pickled Cucumber with Ginger and Soy sauce
Temaki sushi is hand rolled, a very popular party sushi in Japan. Cut toppings into strips, serve on a large plate for a table for everyone to stretch their arms and pick, they will make their own temaki sushi and eat as they go along. It is a bit like sandwich, you can mix any toppings to create your own delicious sushi.
Serves 2
Ingredients
1 | Cucumber |
5ml | Sea salt |
40ml/37g/2tbsp | Soy sauce |
30ml/26g/2tbsp | Sugar |
10ml/10g/2tsp | Rice Vinegar |
5g | Ginger, thinly sliced and cut into fine strips |

Chili, chopped |
A pinch | Shredded Salted Kombu |
Preparation
- Cut cucumber in half vertically, remove the soft fresh with tea spoon.
- Cut into 1cm chunks
- Draw water out of cucumber. In a medium bowl, sprinkle sea salt and shuffle with hands few times. Leave for 15 min. With both hands, squeeze the water out of the cucumber as much as possible.
Toppings
- Spicy Tuna Mayo – Mix tuna chunks, kewpie mayonnaise and shichimi red chili pepper
- Salmon/Cucumber/Avocado – Cut into 7-8cm strips
Cooking
- Add the cucumber, soy sauce, vinegar, sugar and fine strips of ginger to a saucepan and mix. Bring to a boil over medium heat, keep stiring and continue cooking for 30 seconds.
- Strain the sauce and cool down the cucumber and sauce separately to prevent the cucumber from overcooking.
- When cooled, combine the cucumber and sauce, add chopped chilli and shredded salted kombu and store in the fridge for 1 hour.
